Three Recipes with Three Ingredients for World Vegan Day

Tomorrow is World Vegan Day so today I’m sharing THREE FOODS WITH THREE INGREDIENTS. I'm celebrating World Vegan Day by sharing three delicious foods (well, I think they're delicious) that only need three ingredients. SIMPLE!

Is there anyone who DOESN'T like food? And who doesn't like super-easy-to-make food?

 

  1. My favourite pasta sauce.
    It's kind of like a red pesto, only not quite.
    Ingredients: One tin of chopped tomatoes, as much garlic as you like (I usually use two or three cloves), two handfuls of roasted almonds or walnuts.
    Method: Add all into a jug and blend. Warm through - but don't let boil. Add to your favourite pasta. Of course, you can add any other ingredients in that you like and I often do add in a bit of salt and pepper or sometimes some chillies. But as a super simple and quick pasta sauce, this one is my absolute favourite. Plus - no need to worry about vampires after you eat it!
  2. Easy burger patties.
    These can be pretty squishy, so be warned. Just add some flour if they're way too squishy.
    Ingredients: One baked sweet potato, one can of cannellini beans, spices.
    Method: Bake the sweet potato in the oven with its skin on (45 mins is usually good unless it's a MASSIVE sweet potato, just stick an oven mitt on and give it a squeeze to make sure it's soft inside, then you know it's done). Drain the beans and mash them up with a fork in a bowl with spices. Cut open the sweet potato and scrape the flesh out into the bowl with the beans. Mix it all up. Form it into patties and bake or fry them.
  3. Chocolate peanut butter balls.
    This is my mum's recipe - she started making them for me a few years ago for Christmas. She sometimes swaps some sort of cereal for the oats but they are delicious every time. If you use a really sweet peanut butter then try use a dark chocolate, unless you like things really sweet.
    Ingredients: 30g of peanut butter - soft or crunchy, 12g oats, 1 plain chocolate, chocolate bar.
    Method: In a bowl mix up the peanut butter and oats. Roll into balls and place on a tray in the fridge for 30 mins or so. Fill a pot half full with water and bring it to a gentle boil. Place a glass bowl on top of the pot (that fits nicely on top and doesn't fall in), and add the chocolate to the glass bowl. Stir the chocolate constantly until it's melted. You can also melt the chocolate in the microwave if you decide you can't be bothered to do it the other way. Just keep a close eye on it! Once the chocolate has melted dip the peanut butter balls into it, make sure they're completely coated and return them to the tray. Keep them in the fridge so the chocolate gets a nice crunch to it. Or don't, that's up to you really, but if you don't keep them cool then the chocolate will melt.
